Pot roast

While growing up, I enjoyed pot roast. I walked into my parents house after school and the aroma drifted to my nose and I was immediately hungry. I guess this was my comfort food, as it always made my day better. It can be a very simple meal or very elaborate. It's always a very versatile dish, and could be changed into other things if there were any leftovers.

Chicken Paella

Last night I couldn't decide what to fix, but I had just bought boneless skinless chicken breasts and knew I could make a quick dinner. So, from start to finish was about 30 minutes. A 17 year old Spanish exchange student showed me how to make Paella.

Tonights dinner! Awesome!

Having tenderloin cut into Filet Mignon steaks for a couple of days in the refrigerator ages them nicely and gives them a better flavor. So tonight after all the homework was done I hurried to make a delicious dinner. Filet mignon is my favorite of all steaks, but can be ruined very easily by over or under cooking. I like mine med to med rare. Tonight they turned out wonderfully right. The rest of the meal was Jasmine Rice in the rice cooker and fresh asparagus in the oven.

A special gift for Your Kids

Last year I decided to give my 5 children a special gift. Since I turned sixty this year I know won't be around forever and when I'm not I want their traditions to continue along with the new traditions they will develop. They have always loved coming home to an elaborate dinner for special holidays and enjoy the recipes that have been developed over the years. My husband's maternal grandmother was a wonderful cook, as was his mother.

Beef stew/Grandmas imagination

The other night I cooked a piece of beef in the oven. Put some onions, garlic, and carrots in with it. I was really trying out my 'everyday pan.' Then I made mashed potatoes as I know the baby would work on those pretty well. I had some left overs and decided to turn it into beef stew. I cut the beef into bite size pieces chopped up the carrots and refrigerated it for a day or two.
