Uh-oh. I’m out with another secret family recipe! This is my mother’s famous breakfast/brunch recipe that everyone in my family and friends love. I grew up eating this dish on the weekends. It’s not your typical Ecuadorian bolon, but it did originate there. In Ecuador bolon… Continue

My husband and I LOVE Salsa! For years we have grown tomatoes and peppers, so we could make fresh from the garden salsa. It has kind of become our "thing" when we go to group get togethers. We always bring the salsa. We have quite a few… Continue

Paula Deen is the inspiration for A Southern Belle Visits Provence! The first time I tasted shrimp and grits was at Uncle Bubbas when I was in Savannah for the Real Women of Philadelphia live event to announce the talent search winners. All 16 of us finalists were treated to an incredible five days in Savannah. One of the highlights of our stay was lunching… Continue

Surprisingly, the tomato is the world’s most popular fruit. And yes, just like the brinjal and the pumpkin, botanically speaking it is a fruit, not a vegetable. More than 60 million tons of tomatoes are produced per year, 16 million tons more than the second most… Continue

This chickpea salad is super fast to throw together and tastes AWESOME!
It's very filling and makes a perfect light meal.
I've made it a habit to cook up a bag of chickpeas in the pressure cooker, so I can have them on hand when the craving hits. Yesterday, I made Charlie a batch of Italian Soup to take to lunch. Of course, I had plenty of chickpeas leftover to make hummus AND something else, but what?
I started flipping through my favorite Italian… Continue

As you may have guessed from the picture, I used Rotini pasta instead of Penne :) Rotini means "twists" BTW. I used a can of Italian Stewed Tomatoes for the diced tomatoes as well.
This was delicious Neen..and easy!

So I’m walking through the store and these tomatoes catch my eye. Ugly Ripe Tomatoes are touted as having “just-picked” flavour out of season. Nothing compares to the taste of a just-picked tomato so I had to try it. I shelled out $3.40 for two tomatoes (!) to make a salad. It has Ugly on the label so as not to confuse it with the Supermodel Tomato (which, sadly, has anger issues.)
You’ve got to feel sorry for these tomatoes. They got teased by the… Continue

This was dinner tonight. I sauteed some ground turkey with chopped onion, ground coriander, oregano, cumin and some tomato paste. I deglazed with some white wine.
I put the meat mixture on a bed of fresh spinach with chopped cucumber, mushrooms, tomatoes, jalapenos and shredded cheese. I topped it with some salsa (made from a dry mix that nearly blew my head off it was so hot) and some homemade southwestern ranch dressing.
Not exactly authentic, but pretty tasty.
