Simple Chickpea Salad

This chickpea salad is super fast to throw together and tastes AWESOME! It's very filling and makes a perfect light meal.

Penne Pasta with Spinach & Bacon

As you may have guessed from the picture, I used Rotini pasta instead of Penne :) Rotini means "twists" BTW. I used a can of Italian Stewed Tomatoes for the diced tomatoes as well.

Chopped Ugly Salad is pretty on the inside

So I’m walking through the store and these tomatoes catch my eye. Ugly Ripe Tomatoes are touted as having “just-picked” flavour out of season. Nothing compares to the taste of a just-picked tomato so I had to try it. I shelled out $3.40 for two tomatoes (!) to make a salad. It has Ugly on the label so as not to confuse it with the Supermodel Tomato (which, sadly, has anger issues.)

Turkey Taco Salad

This was dinner tonight. I sauteed some ground turkey with chopped onion, ground coriander, oregano, cumin and some tomato paste. I deglazed with some white wine.

I put the meat mixture on a bed of fresh spinach with chopped cucumber, mushrooms, tomatoes, jalapenos and shredded cheese. I topped it with some salsa (made from a dry mix that nearly blew my head off it was so hot) and some homemade southwestern ranch dressing.

Not exactly authentic, but pretty tasty.
