Colorful and Sweet Braised Red Cabbage, Apple and Caraway

I can honestly say that writing for this blog is forcing me to expand my repertoire of recipes. (Definitely not a bad thing.)
Braised cabbage would never have been on my list for an evening meal, but tonight I needed to do something different with some aging apples, and red cabbage. I browsed through my cookbooks, and found this recipe from Reader’s Digest Eat to Beat High Blood Pressure.

I had to call my friend, Pam, to make sure I had cooked the cabbage properly. She gave me a few tips, and the cabbage turned out to be a wonderful, colorful, very tasty side dish.

Served with baked cod, the combination made for a terrific light and healthy meal. Can’t beat that!

Serves 6

2 tsp olive oil
1 small onion, finely chopped
1 tsp caraway seeds
1 pound red cabbage
1 pound red cabbage, thinly sliced
1 tbs cider vinegar
2 small crisp apples, chopped
1 tsp honey
salt and pepper to taste

Heat oil in large non-stick skillet over medium heat. Add onion and caraway and saute until softened for 5 minutes.
Stir in cabbage, vinegar and a pinch of salt. Cook 5 minutes, covered, until cabbage wilts.
Add remaining ingredients and cook covered another 5 minutes until cabbage is tender and apples are crisp-tender.

What’s good for me in this dish?

Cabbage is an excellent source of vitamin C, fiber, manganese, folate, vitamin B6, potassium, and omega-3 fatty acids. Cabbages protects against cardiovascular disease, some kinds of cancers, Alzheimer’s Disease and gastrointestinal health.

Apples are a great source of vitamin C and fiber. Vitamin C is an important antioxidant for a healthy heart. The flavonoids in apples also contribute to heart health. High in fiber, apples can help lower LDL cholesterol.
